Ingredients:
1 cup of dosa batter
3-4 boiled and mashed potatoes
1 onion, finely chopped
1/2 tsp. mustard seeds
1/2 tsp. cumin seeds
1/2 tsp. turmeric powder
1 tsp. red chili powder
Salt to taste
Oil or ghee for cooking

Heat oil or ghee in a pan and add mustard seeds and cumin seeds. Once they start to crackle, add the chopped onions and sauté until they turn golden brown.
Add the mashed potatoes, turmeric powder, red chili powder, and salt. Mix well and cook for 5-7 minutes until the filling is well combined and fragrant.
Heat a non-stick tawa or griddle over medium heat. Pour a ladleful of dosa batter onto the tawa and spread it in a circular motion to make a thin dosa.
Spread a spoonful of the potato filling on the dosa and fold it over to form a half-moon shape.
Cook the dosa on both sides until it is crispy and golden brown.
Serve hot with coconut chutney and sambar.
